OOLONG TEA
Oolong tea is a complex and versatile tea, with a variety of leaf and crafting styles that produce a broad range of flavours and aromas. As a semi-oxidized tea, it falls between black and green tea. The tea leaves undergo a highly skilled process of withering, shaking, kneading, twisting, and firing. The natural oils of the tea leaves are released by shaking, and the leaves are allowed to partially oxidize, with oxidation levels ranging from 10% to 80%. Each tea master's unique methods of cultivation, preparation, and processing are influenced by their terroir and tradition, resulting in distinct and diverse Oolong teas.
