PU-ERH TEA | POST-FERMENTED TEA
Pu-erh tea is a distinctive fermented tea from Yunnan province, China. It is crafted from large-leaf Assamica tea trees that thrive in bio-diverse forests rich in natural microbes. The leaves undergo a unique sun-drying process and are typically compressed into cakes or bricks.
These compressed cakes create a low-oxygen environment, ideal for fermentation. This process can be either natural (raw/sheng) or accelerated (ripe/shou), resulting in Pu-erh's characteristic earthy, rich, and sometimes slightly sweet flavour. Often aged, Pu-erh tea's taste evolves over time, much like fine wine.
